Serves 4
Ingredients :
1 cup Thai Sweet Rice
2 cups good-quality coconut milk
3 Asian mangoes
4 tbsp. brown sugar or asian palm sugar
1/4 tsp. salt
1 tablespoon toasted sesame seeds
water
Preparation:
Soak the thai sweet rice for at least 8 hours or overnight, drain and rinse to get rid of excess starch.
Combine the rice and water in a saucepan and bring to a boil.
Partially cover with a lid and reduce heat to low.
Simmer in this way for 20 minutes, or until water has been absorbed by the rice.
While the rice cooks, in a heatproof bowl, mix together 1 1/2 cup coconut milk, 1 tbsp. brown sugar and salt, and heat in the microwave on high for 2 minutes.
Stir until the sugar has dissolved.
Stir the cooked rice into the coconut milk mixture and cover.
Allow to cool for 1 hour.
To make the sauce, warm 1/2 cup coconut milk over medium-low heat for 5 minutes.
Add 3 tbsp. brown sugar and stir to dissolve.
Place the sticky rice on a serving dish.
Prepare the mangoes, peeling and cutting into thick slices.
Arrange the mangoes on top of the rice and drizzle lots of the sweet coconut sauce over.
Top it with some toasted sesame seeds.
